A deliciously creamy and refreshing no-bake cheesecake featuring a graham cracker crust and a light Greek yogurt filling.

  • 1.25 cup graham cracker crumbs
  • 1/4 cup coconut oil (melted and cooled to room temperature)
  • 2 tbsp sugar
  • 8 oz cream cheese (softened to room temperature)
  • 3/4 cup greek yogurt
  • 4 tbsp honey
  • 1 tbsp lemon juice
  • 1.25 tsp vanilla
  • Pinch of salt
  • whipped cream
  • maraschino cherries

Instructions

  1. Combine the graham cracker crumbs, melted coconut oil, and sugar in a bowl.
  2. Stir until the mixture resembles wet sand with no dry pockets.
  3. Press this mixture firmly and evenly into the bottom of a 9-inch springform pan or 8×8 inch baking dish.
  4. Use the bottom of a measuring cup to create an even, compact layer.
  5. In a separate bowl, whisk the softened cream cheese alone for 30 seconds to break up any lumps.
  6. Add the greek yogurt, honey, lemon juice, vanilla, and salt to the cream cheese.
  7. Whisk until completely smooth and well combined.
  8. Pour the creamy filling mixture evenly over the graham cracker crust.
  9. Smooth the top with a spatula for an even surface.
  10. Cover the pan with plastic wrap.
  11. Refrigerate for at least 2 hours, or preferably overnight, until the filling is set and chilled through.
  12. Remove the cheesecake from the refrigerator.
  13. Carefully run a thin knife around the edges to loosen it from the pan.
  14. Remove the springform ring (if using).
  15. Top with a generous dollop of whipped cream.
  16. Garnish with maraschino cherries.
  17. Slice and serve immediately.
  18. Wipe your knife between cuts with a warm, damp cloth for clean slices.
