A bright, creamy, and refreshing no-bake cheesecake featuring a zesty lemon filling and a buttery graham cracker crust.

Ingredients

  • 2 cups (165 g) graham cracker crumbs
  • ½ cup (115 g) unsalted butter, melted
  • 16 oz (450 g) cream cheese, softened at room temperature
  • 1 cup (200 g) granulated sugar
  • 1 cup (250 ml) heavy cream, whipped to soft peaks
  • Juice and zest of 2 lemons
  • Whipped cream and additional lemon zest or lemon slices

Instructions

  1. In a medium bowl, combine graham cracker crumbs and melted butter.
  2. Mix until well combined and crumbs are evenly moistened.
  3. Press the mixture firmly into the bottom of a 9-inch springform pan.
  4. Place the pan in the fridge to chill while preparing the filling.
  5. In a large bowl, beat the softened cream cheese until it is smooth and creamy.
  6. Gradually add the granulated sugar to the cream cheese.
  7. Beat well until the sugar is fully incorporated and the mixture is smooth.
  8. Gently fold in the whipped heavy cream.
  9. Add the fresh lemon juice to the cream cheese mixture.
  10. Add the lemon zest to the cream cheese mixture.
  11. Fold all ingredients together until the mixture is smooth and well combined.
  12. Pour the cream cheese mixture over the chilled crust in the springform pan.
  13. Smooth the top of the cheesecake with a spatula.
  14. Refrigerate the cheesecake for at least 6 hours to set.
  15. For best results, chill the cheesecake overnight.
  16. To serve, run a small, warmed paring knife around the edge of the springform pan to loosen the cheesecake.
  17. Remove the cheesecake from the springform pan.
  18. Garnish with additional whipped cream and fresh lemon zest or lemon slices just before serving.
  19. Slice and enjoy immediately.

Notes

Ensure cream cheese is at room temperature for a smooth, lump-free filling.
Do not overmix the heavy cream; whip it just to soft peaks.
Chill the cheesecake for at least 6 hours, or ideally overnight, for the best set.
Run a warm knife around the pan’s edge for easy release and clean slices.
