White Chocolate Blueberry Truffles

Luxurious no-bake truffles combining creamy white chocolate with tart, sweet freeze-dried blueberries, perfect for any occasion.

Ingredients

  • 9 oz. white chocolate-chopped into very small pieces
  • 5 Tablespoons unsalted butter-softened
  • 3 Tablespoons heavy cream
  • 1.2 oz. freeze dried blueberries- powdered
  • ¼ cup powdered sugar

Instructions

  1. Simmer heavy cream in a small saucepan.
  2. Remove from heat.
  3. Add softened butter to the cream.
  4. Stir until butter is completely melted and combined with heavy cream.
  5. Add powdered dried blueberries to the cream mixture.
  6. Stir to combine the blueberry mixture.
  7. Set the blueberry mixture aside.
  8. Melt chopped white chocolate over a double boiler.
  9. Stir casually until the white chocolate is smooth and completely melted.
  10. Ensure the chocolate does not heat above 105°F.
  11. Gently stir the lukewarm blueberry mixture into the melted chocolate.
  12. Cool the combined mixture to room temperature.
  13. Cover the mixture with plastic wrap.
  14. Refrigerate until firm enough to roll balls (2-3 hours or overnight).
  15. While cooling, periodically remove from the fridge and stir with a fork to prevent fat separation.
  16. Cover with plastic wrap and place back into the fridge after stirring.
  17. Scoop out the mixture.
  18. Roll the mixture into 1-inch balls.
  19. Clean hands with a paper towel after each truffle if sticky, or dust hands with powdered sugar.
  20. Roll each truffle into powdered sugar to coat them well.
  21. Store in the fridge in an airtight container.

Notes

Always use high-quality white chocolate for the best texture.
Finely chop the white chocolate to ensure even melting.
Stir the mixture during chilling to prevent fat separation.
Dust your hands with powdered sugar if the truffle mixture becomes sticky while rolling.
