Ingredients

Scale
  • Unsalted butter, softened – 6 tablespoons
  • Creamy peanut butter – ½ cup
  • Brown sugar – ½ cup
  • Granulated sugar – ½ cup
  • Vanilla extract – ½ teaspoon
  • 1 large egg
  • Baking soda – ¾ teaspoon
  • All-purpose flour – 1¼ cups
  • Miniature Reese’s Peanut Butter Cups – 30
  • Jumbo heart sprinkles – as needed

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Lightly grease a mini muffin pan.
  3. Beat butter, creamy peanut butter, brown sugar, and granulated sugar together in a bowl until combined and creamy.
  4. Mix in the large egg and vanilla extract until the mixture is smooth.
  5. Add the baking soda to the mixture and mix briefly to distribute it evenly.
  6. Gradually mix in the all-purpose flour just until it is combined and no dry streaks remain.
  7. The dough will be soft and slightly sticky.
  8. Roll the cookie dough into 1-tablespoon balls.
  9. Place one dough ball into each cavity of the prepared mini muffin pan.
  10. Bake for 8 minutes, until the edges are set but the centers of the cookies still look soft.
  11. Immediately remove the pan from the oven.
  12. Press one miniature Reese’s Peanut Butter Cup into the center of each hot cookie.
  13. Allow the chocolate to soften slightly from the heat of the cookie.
  14. Press a jumbo heart sprinkle onto the top of each Reese's cup.
  15. Refrigerate the pan for 10–15 minutes to allow the chocolate to set completely.
  16. Carefully remove the cooled cookie cups from the pan.
  17. Serve and enjoy your Valentine Cookie Cups!

Notes

Use regular creamy peanut butter, not natural, for best results.
Standard miniature Reese’s cups are required; bite-size are too small.
Don’t overbake; cookies should look slightly underdone in the center.
Refrigeration is key for clean removal and fully set chocolate.
Grease pan thoroughly to prevent sticking.
