Chewy, sweet, and bursting with apricot-coconut flavor, these no-bake treats are incredibly easy to make.

Ingredients

  • 3 1/4 cups dried apricots
  • 2 3/4 cups finely shredded coconut
  • 1/2 teaspoon vanilla extract
  • 1 pinch salt
  • 3 tbsp granulated sugar for coating

Instructions

  1. Add the dried apricots to a food processor.
  2. Pulse until they break down into small pieces, about 1-2 minutes.
  3. Add the shredded coconut to the food processor.
  4. Add the vanilla extract to the food processor.
  5. Add the salt to the food processor.
  6. Process all ingredients until the mixture comes together into a sticky, cohesive dough, about 1-2 minutes.
  7. Transfer the apricot-coconut dough onto a clean work surface.
  8. Pinch off portions about the size of a walnut.
  9. Roll each portion between your palms into a smooth ball.
  10. Place the shaped balls on a parchment-lined baking sheet.
  11. Pour the granulated sugar into a shallow bowl.
  12. Working with a few balls at a time, roll them in the sugar until lightly coated on all sides.
  13. Press gently so the sugar adheres to the balls.
  14. Arrange the finished pieces on a serving plate or store in an airtight container.

Notes

Ensure dried apricots are soft and pliable for best texture.
Use finely shredded coconut, not flaked, for smooth rolling.
Slightly damp hands prevent sticking when rolling the balls.
Do not over-process; stop once mixture is cohesive but still textured.
