A comforting and easy casserole featuring lean ground turkey and pasta in a classic sloppy joe sauce, topped with bubbly cheddar cheese.

  • 2 cups elbow pasta
  • 1 tbsp olive oil
  • 1.25 lb ground turkey
  • 2 cups cauliflower rice
  • 1 red bell pepper (diced into 1/2-inch pieces)
  • 1 cup yellow onion (diced)
  • 1 cup carrots (finely diced into 1/4-inch pieces)
  • 4 garlic cloves (minced)
  • 18 oz tomato sauce
  • 2 tbsp brown sugar
  • 1 tbsp worcestershire sauce
  • 2 tsp dry mustard
  • 1 tsp smoked paprika
  • salt
  • pepper
  • 1.25 cup cheddar cheese (freshly shredded)

Instructions

  1. Preheat your oven to 400°F.
  2. Dice the red bell pepper into 1/2-inch pieces.
  3. Finely dice the carrots into 1/4-inch pieces.
  4. Dice the yellow onion.
  5. Mince the garlic cloves.
  6. Cook the elbow pasta according to package directions until al dente.
  7. While pasta cooks, heat 1 tbsp olive oil in a large oven-safe skillet over medium-high heat.
  8. Add the 1.25 lb ground turkey to the skillet.
  9. Brown the ground turkey for 4-5 minutes, breaking it apart with a spoon until no pink remains.
  10. Add the diced carrots, diced onion, diced bell pepper, and minced garlic to the skillet with the turkey.
  11. Cook for 5-7 minutes, stirring occasionally, until the vegetables begin to soften.
  12. Add the 2 cups cauliflower rice to the skillet.
  13. Stir everything together for about 1 minute to combine.
  14. Stir in the 18 oz tomato sauce.
  15. Stir in the 2 tbsp brown sugar.
  16. Stir in the 1 tbsp Worcestershire sauce.
  17. Stir in the 2 tsp dry mustard.
  18. Stir in the 1 tsp smoked paprika.
  19. Add a pinch of salt and pepper to taste.
  20. Bring the mixture to a simmer over medium heat for about 2 minutes, stirring occasionally.
  21. Drain the cooked pasta.
  22. Stir the drained pasta into the turkey-vegetable mixture until everything is evenly combined.
  23. Top the mixture evenly with the 1.25 cup freshly shredded cheddar cheese.
  24. Transfer the skillet to the preheated 400°F oven.
  25. Bake for 5-7 minutes until the cheese is melted and bubbly.
  26. Remove from the oven.
  27. Let it rest for 2-3 minutes before serving.

Notes

Cook pasta al dente to prevent mushiness after baking.
Shred cheddar cheese from a block for the best, smoothest melt.
Finely dice carrots so they soften properly within the cooking time.
Allow casserole to rest for a few minutes before serving to help it set.
