Fudgy, rich, and fun no-bake vegan brownies topped with a smooth chocolate ganache and colorful sprinkles.

Ingredients

  • 2 cups medjool dates, tightly packed
  • 1 1/2 cups almond flour
  • 1 cup raw walnuts
  • 1/2 cup cocoa powder (or cacao powder)
  • 1 tsp vanilla extract
  • 1/4 tsp salt
  • 1 1/2 cups chocolate chips
  • 2/3 cup canned coconut cream
  • 1 tbsp maple syrup
  • 1 tsp vanilla extract
  • 1/4 cup rainbow candy coated chips

Instructions

  1. Line a 9×9 square dish with parchment paper, leaving some paper hanging over the edges.
  2. Add the almond flour, walnuts, cocoa powder, 1 tsp vanilla extract, and 1/4 tsp salt to a food processor.
  3. Blend until the walnuts are crumbled into a flour-like consistency.
  4. Add the pitted medjool dates to the food processor.
  5. Blend again until a sticky dough forms.
  6. Transfer the brownie dough to the prepared square dish.
  7. Firmly press the dough across the bottom of the dish in an even layer.
  8. Add chocolate chips, maple syrup, and 1 tsp vanilla extract to a bowl and set aside.
  9. Scoop all contents of the canned coconut cream (both thick cream and clear liquid) into another bowl.
  10. Microwave the coconut cream for 1 minute 45 seconds.
  11. Whisk the microwaved coconut cream together to combine.
  12. Pour 2/3 cup of the warm coconut cream over the bowl of chocolate chips, maple syrup, and vanilla extract.
  13. Let the mixture sit for 1-2 minutes.
  14. Whisk together until smooth.
  15. If chocolate chips are not fully melted, microwave for an additional 15-30 seconds and whisk again.
  16. Pour the chocolate ganache over the brownie layer.
  17. Spread the ganache evenly across the surface of the brownies.
  18. Tap the dish against the countertop to help smooth the ganache, if needed.
  19. Sprinkle the rainbow candy coated chips on top.
  20. Chill the brownies in the refrigerator for 4 hours, or until the chocolate ganache sets.
  21. Gently lift the parchment paper out of the dish to remove the brownies.
  22. Slice into 16 squares.

Notes

Always use soft medjool dates for the best texture; soak if they are firm.
Press the brownie base very firmly into the pan for a sturdy foundation.
Allow the warm coconut cream to sit on the chocolate chips for a few minutes before whisking for a smoother ganache.
Ensure the brownies chill for the full 4 hours so the ganache sets completely.
For clean slices, heat your knife under hot water and wipe it clean between each cut.
