Quick and easy No Bake Sugar Cookies with a delicious cheesecake twist, perfect for a fast dessert without turning on the oven.

  • ¾ cup salted butter
  • 2 cups granulated sugar
  • ⅔ cup whole milk
  • ½ teaspoon vanilla extract
  • 4 cups quick-cooking oats
  • 3.4 ounces instant cheesecake pudding mix
  • ¼ cup powdered milk
  • sprinkles, for garnish (optional)

Instructions

  1. Line a large baking sheet with parchment paper or wax paper.
  2. Set the lined baking sheet aside.
  3. Melt butter in a large saucepan over medium-high heat.
  4. Add granulated sugar and whole milk to the saucepan.
  5. Whisk constantly as you bring the mixture to a boil.
  6. Continue to cook and stir for 1 minute once boiling.
  7. Remove the saucepan from heat.
  8. Quickly stir in vanilla extract.
  9. Add quick-cooking oats to the saucepan.
  10. Add instant cheesecake pudding mix to the saucepan.
  11. Add powdered milk to the saucepan.
  12. Stir until all ingredients are fully incorporated.
  13. Use a spoon or cookie scoop to portion out 1-2 tablespoons of mixture.
  14. Drop the mixture onto the prepared baking sheet.
  15. Repeat until all the mixture is used.
  16. If desired, decorate cookies with sprinkles while the mixture is still wet.
  17. Allow cookies to set until firm, about 1 hour.
  18. Serve as desired.

Notes

Ensure you use quick-cooking oats, not old-fashioned, for the correct texture.
Boil the butter, sugar, and milk mixture for exactly 1 minute for proper setting.
Work quickly when scooping, as the mixture sets fast once off the heat.
