These delightful No Bake Red Velvet Cake Balls are packed with classic red velvet flavor, a soft texture, and a crisp candy coating – perfect for any occasion!

  • 15.25 OZ Red velvet cake mix
  • 8 oz block cream cheese softened
  • 20 oz vanilla melting wafers
  • sprinkles optional
  • ½ Cup red candy melts optional

Instructions

  1. Preheat the oven to 350 degrees F.
  2. Line a baking sheet with parchment paper.
  3. Pour the dry red velvet cake mix onto the parchment paper, spreading it out evenly.
  4. Bake for about five minutes in the preheated oven.
  5. Remove from oven when the cake mix reaches 165 degrees F.
  6. Let the heat-treated cake mix cool completely to room temperature.
  7. Whip the softened block cream cheese in a medium bowl with a hand mixer until it is a smooth consistency.
  8. Add the cooled cake mix into the whipped cream cheese.
  9. Beat again on medium-high speed until the red velvet cake crumbs and cream cheese are fully combined and form an almost cookie dough texture.
  10. Cover the bowl with plastic wrap.
  11. Place the bowl in the refrigerator to chill for 2 hours.
  12. Line two clean baking sheets with parchment paper.
  13. Use a 1 1/2 tablespoon cookie scoop to portion out the cake ball dough.
  14. Roll each portion of mixture into a smooth ball.
  15. Place each ball onto the prepared baking sheet, leaving a little space in between each.
  16. Repeat until all the dough is rolled into balls.
  17. Let the rolled dough balls set at room temperature for 15 minutes.
  18. Melt the vanilla melting wafers using either a double boiler on the stove or a microwave.
  19. If using a microwave, place wafers in a large microwave-safe bowl.
  20. Microwave on high for 30 seconds, then stir.
  21. Repeat microwaving for 30-second intervals, stirring after each, until the wafers are completely melted and smooth.
  22. Dip each of the dough balls into the melted vanilla wafers.
  23. Tap off any excess chocolate at the top of the bowl.
  24. Place the dipped ball back onto the parchment paper to allow the coating to harden.
  25. Add sprinkles immediately while the coating is still wet, if desired.
  26. If adding additional red candy melt drizzles, melt the red candy melts in the same way as the vanilla wafers.
  27. Drizzle the melted red candy melts on top of the coated balls, either by hand or using a piping bag.
  28. Let the chocolate coating set completely before serving.

Chilling the mixture for the full 2 hours is crucial for easy rolling.
