These simple no-bake energy bites are packed with superfoods and a gentle matcha kick, perfect for a healthy snack or quick boost.

Ingredients

  • 1 cup (100 g) ground gluten free oats
  • 1 cup (110 g) ground almonds (or almond flour)
  • 1/4 cup (25 g) ground flaxseed (linseed)
  • 1 1/2 tbsp (9 g) your favourite supergreens blend
  • 1 tsp (2 g) spirulina powder
  • 1/2 tbsp (3 g) matcha powder
  • 1/4 cup (50 g) melted coconut oil
  • 3/8 – 1/2 cup (90 g120 g) maple syrup (depending on how sweet you want the energy bites to be)
  • 1.8 oz 50 g melted dairy free white chocolate for the drizzle (optional)

Instructions

  1. Place ground gluten free oats, ground almonds, ground flaxseed, supergreens blend, spirulina powder, and matcha powder in a bowl.
  2. Mix all dry ingredients together until evenly distributed.
  3. Add melted coconut oil to the bowl.
  4. Add maple syrup to the bowl, starting with 3/8 cup.
  5. Mix all ingredients together until everything is evenly distributed and you get a homogeneous mixture with a dough-like consistency.
  6. Adjust maple syrup if needed for desired sweetness and consistency.
  7. Take about 1 to 1 1/2 tablespoons of the mixture.
  8. Roll the mixture into balls.
  9. Place the rolled balls onto a baking tray.
  10. Freeze for about 30 minutes to firm up.
  11. If desired, melt the dairy-free white chocolate.
  12. Drizzle the melted dairy-free white chocolate over the frozen energy bites.
  13. Return the drizzled bites to the freezer until the chocolate has set.

Notes

Ensure oats are finely ground for best texture.
Adjust maple syrup to your preferred sweetness level.
Chilling in the freezer is crucial for the bites to hold their shape.
For a stronger matcha flavor, you can slightly increase the matcha powder.
