  • 1/4 cup maple syrup
  • 3/4 teaspoon ginger powder
  • 1 teaspoon cardamom powder
  • 1/2 teaspoon cinnamon powder
  • 1/4 teaspoon nutmeg
  • FOR ROLLING COOKIE DOUGH
  • 1/4 cup granulated sugar
  • 1/4 teaspoon ginger powder
  • 1/4 teaspoon cardamom powder
  • 1/4 teaspoon cinnamon powder
  • 1/8 teaspoon nutmeg

Instructions

  1. Combine all purpose flour, 3/4 teaspoon ginger powder, 1 teaspoon cardamom powder, 1/2 teaspoon cinnamon powder, 1/4 teaspoon nutmeg, baking powder, and baking soda in a clean bowl.
  2. Mix well with a clean whisk until everything is evenly distributed.
  3. Set aside the dry ingredients.
  4. In a separate mixing bowl, cream together softened salted butter, 3/4 cup light brown sugar, and 1/4 cup granulated sugar until creamy.
  5. Add the egg to the creamed mixture.
  6. Whisk until the egg is well combined.
  7. Add 1/4 cup maple syrup and 1/2 teaspoon vanilla extract to the mixture.
  8. Whisk everything until it becomes homogenous.
  9. Slowly add the prepared dry ingredients to the wet ingredients.
  10. Fold the cookie dough gently with a spatula until just combined.
  11. Divide the cookie dough into equal-sized balls, approximately 1 1/2 tablespoons per cookie.
  12. Roll each portion into a smooth ball.
  13. In a small bowl, mix together 1/4 cup granulated sugar, 1/4 teaspoon ginger powder, 1/4 teaspoon cardamom powder, 1/4 teaspoon cinnamon powder, and 1/8 teaspoon nutmeg.
  14. Roll the cookie dough balls in the spice-sugar mixture.
  15. Place the coated dough balls on a parchment-lined baking sheet pan.
  16. Chill the cookie dough balls in the refrigerator for 30 minutes, or overnight.
  17. Preheat the oven to 180°C (350°F).
  18. Gently flatten each chilled cookie dough ball with the bottom of a measuring cup or a glass.
  19. Bake the cookies in the preheated oven for 10-12 minutes.
  20. Remove from oven once the edges start to brown.
  21. Cool the cookies on a wire rack.
  22. Once completely cooled, you may top them with any remaining spice sugar if desired.
