A creamy, cheesy, and comforting Mac and Cheese Recipe made from scratch with a delicious blend of cheeses and simple seasonings.

Ingredients

  • 4 tablespoons unsalted butter
  • 3 tablespoons all-purpose flour
  • 1 teaspoon garlic powder
  • 1/2 teaspoon ground mustard
  • 1/2 teaspoon paprika
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 2 cups whole milk
  • 2-1/2 cups chicken broth
  • 2-1/2 cups uncooked elbow macaroni
  • 1/2 cup freshly shredded mozzarella cheese
  • 1-1/2 cups freshly shredded sharp Cheddar cheese
  • 1/4 cup freshly grated Parmesan cheese

Instructions

  1. Melt butter in a large, nonstick pot over medium heat.
  2. Whisk in flour until smooth, about 1 minute.
  3. Add garlic powder, ground mustard, paprika, onion powder, salt, and pepper.
  4. Whisk seasonings constantly for about 1 minute.
  5. Gradually add whole milk, whisking continuously until the mixture thickens (1–2 minutes).
  6. Slowly add chicken broth, while constantly whisking.
  7. Bring the mixture to a boil.
  8. Once boiling, add the uncooked elbow macaroni.
  9. Stir the macaroni with a wooden spoon.
  10. Reduce heat to medium-low, maintaining a gentle bubble across the top when not stirring.
  11. Stir often, scraping the bottom of the pot, for 8–11 minutes.
  12. Cook until pasta is just cooked (al dente) and the sauce slightly thickens.
  13. Remove the pot from heat.
  14. Sprinkle in the freshly shredded mozzarella cheese, stirring gently until fully melted.
  15. Sprinkle in the freshly shredded sharp Cheddar cheese, stirring gently until fully melted.
  16. Sprinkle in the freshly grated Parmesan cheese, stirring gently until fully melted.
  17. Adjust seasoning to taste.
  18. Serve hot, optionally with a dash of hot sauce.

Notes

Always use freshly shredded cheese for the best melt and creamiest sauce.
Whisk constantly when making the roux and adding liquids to prevent lumps.
Do not overcook the pasta; it should be al dente as it will continue to cook slightly.
Taste and adjust seasonings at the end for perfect flavor.
