Ingredients

  • 2 cups Almond Flour
  • 3 tablespoons Maple Syrup
  • 2 tablespoons Melted Coconut Oil
  • ¼ cup Lime Juice from 2 key limes
  • 2 teaspoons Lime Zest from the lime, optional
  • ½ teaspoon Almond Extract
  • ½ cup Powdered Coconut Sugar
  • 1 tablespoon Lime Juice
  • ¼ teaspoon Vanilla Extract

Instructions

  1. Preheat your oven to 350°F (180°C).
  2. Line a cookie sheet with parchment paper.
  3. In a large mixing bowl, combine almond flour, maple syrup, melted coconut oil, freshly squeezed lime juice, almond extract, and lime zest (if using).
  4. Stir the ingredients with a rubber spatula until mostly combined.
  5. Use your hands to squeeze the mixture and form it into a cohesive cookie dough ball.
  6. If the dough is too dry, add a little extra lime juice, a quarter teaspoon at a time, until it comes together.
  7. If the dough is too wet, add a little more almond flour until it reaches a manageable consistency.
  8. Divide the dough into 9 equal portions.
  9. Lightly oil your hands.
  10. Roll each portion of dough into a smooth ball.
  11. Place each cookie dough ball about an inch apart on the prepared baking sheet.
  12. Gently press the top of each ball with the back of a spoon or your fingers to flatten slightly.
  13. Bake the cookies for 12-14 minutes at 350°F (180°C).
  14. Look for the edges to be slightly golden brown.
  15. Remove the cookies from the oven.
  16. Let the cookies cool on the baking sheet for 5 minutes.
  17. Transfer the cookies to a wire cooling rack.
  18. Allow the cookies to cool completely before glazing.
  19. To make the glaze, in a separate small mixing bowl, stir powdered coconut sugar, 1 tablespoon lime juice, and vanilla extract.
  20. Mix until the glaze is thick and smooth.
  21. If the glaze is too thin, add a bit more powdered sugar to thicken.
  22. If the glaze is too thick, add a tiny bit more lime juice, a drop at a time, until it reaches drizzling consistency.
  23. Drizzle the glaze on top of the completely cooled cookies.
  24. Optionally, add extra lime zest to decorate or boost lime flavors.

Notes

Always use fresh key lime juice and zest for the best flavor.
Ensure cookies are completely cool before glazing to prevent melting.
Don’t overbake; cookies should be soft and lightly golden at the edges.
Adjust dough consistency with small additions of lime juice or almond flour as needed.
