Deliciously low-carb Pop Tart inspired bars with a buttery crust, sweet raspberry jam filling, and a simple glaze.

  • 2 ½ cups almond flour
  • ⅓ cup erythritol sweetener
  • 2 tablespoons coconut flour
  • ¼ teaspoon salt
  • ½ cup butter melted
  • ½ teaspoon vanilla extract
  • ¾ cup sugar free raspberry jam
  • ⅔ cup Swerve Confectioners
  • 2 to 3 tbsp heavy whipping cream
  • 2 tsp keto sprinkles

Instructions

  1. Preheat your oven to 350ºF (175°C).
  2. Line an 8×8 inch metal baking pan with parchment paper, allowing the edges to overhang.
  3. In a large bowl, whisk together the almond flour, erythritol sweetener, coconut flour, and salt.
  4. Stir in the melted butter and vanilla extract until the mixture begins to clump together.
  5. Press a little over half of the dough mixture evenly into the bottom of the prepared baking pan.
  6. Bake the bottom crust for 10 minutes.
  7. Remove the pan from the oven and let the crust cool in the pan for 10 minutes.
  8. Spread the sugar-free raspberry jam evenly over the cooled crust.
  9. Take the remaining dough mixture and sprinkle it over the jam, ensuring it covers the entire surface.
  10. Gently press down lightly on the top crust with your hands to even it out and help it adhere.
  11. Bake for another 20 to 25 minutes, or until the topping is golden brown.
  12. Remove the pan from the oven and let the bars cool completely in the pan on a wire rack.
  13. Once completely cool, refrigerate the bars for at least 1 hour to firm them up.
  14. While the bars are chilling, prepare the glaze.
  15. In a medium bowl, whisk together the Swerve Confectioners with 2 tablespoons of heavy whipping cream.
  16. Add more heavy cream or a tiny bit of water, if needed, to thin the glaze to a spreadable consistency.
  17. Spread the glaze evenly over the chilled bars.
  18. Immediately sprinkle the keto sprinkles over the glaze.
  19. Return the bars to the refrigerator for about 30 minutes to allow the glaze to set.
  20. Once set, use the parchment paper overhangs to lift the bars out of the pan.
  21. Cut the large bar into 16 individual bars.

Always let the crust cool completely before adding the jam for the best texture.
Chilling the bars before cutting is essential for clean, neat slices.
Use a good quality sugar-free jam for the best flavor.
Adjust the amount of heavy cream in the glaze gradually to achieve your desired consistency.
