A deliciously moist and vibrant poke cake infused with raspberry Jello and topped with fluffy whipped cream and fresh fruit.

  • 1 box Duncan Hines White Cake Mix
  • 1/2 teaspoon almond extract
  • 3 oz raspberry gelatin
  • 1 cup boiling water
  • 1/2 cup cold water
  • 8 oz Cool Whip whipped topping
  • 21 oz Solo Raspberry Cake and Pastry Filling
  • 1/2 cup fresh raspberries

Instructions

  1. Preheat your oven according to Duncan Hines box instructions.
  2. Prepare a 13×9 inch baking dish according to Duncan Hines box instructions.
  3. Prepare the cake batter according to package directions.
  4. Add 1/2 teaspoon almond extract to the cake batter.
  5. Pour the batter into the prepared baking dish.
  6. Bake the cake according to package directions until a toothpick inserted in the center comes out clean.
  7. Allow the cake to cool for exactly 10 minutes at room temperature.
  8. While the cake cools, dissolve 3 oz raspberry gelatin in 1 cup of boiling water.
  9. Stir constantly for about 2 minutes until the gelatin is completely dissolved.
  10. Add 1/2 cup of cold water to the gelatin mixture.
  11. Using a fork or wooden skewer, poke holes across the entire surface of the warm cake.
  12. Space the holes about 1 inch apart, aiming for at least 40-50 holes.
  13. Slowly pour the warm gelatin mixture evenly over the cake, allowing it to seep into the holes.
  14. Refrigerate the cake for 45 minutes to allow the gelatin to set.
  15. Remove the chilled cake from the refrigerator.
  16. Spread the 8 oz of Cool Whip evenly across the top of the cake.
  17. Spoon the 21 oz of Solo Raspberry Filling over the whipped topping.
  18. Gently swirl the raspberry filling into the whipped topping for a marbled effect.
  19. Scatter 1/2 cup fresh raspberries over the top as a final garnish.
  20. Return the cake to the refrigerator for 1-2 hours before serving.

Notes

Ensure the cake cools for exactly 10 minutes before poking for best Jello absorption.
Use a fork at a slight angle when poking holes to create better pockets for the gelatin.
Pour the gelatin mixture slowly and deliberately for even distribution.
Chilling the cake for 45 minutes after adding Jello is crucial for setting.
For a beautiful marbled effect, gently swirl the raspberry filling, don’t overmix.
