  • 2 large eggs
  • ¼ cup (60 g) nut butter almond, peanut, cashew or sunflower seed butter
  • ⅓ cup (70 g) granular sweetener monk fruit, or brown sugar
  • 1 tsp vanilla extract
  • ⅙ tsp sea salt
  • 1 ½ cup (150 g) oat flour or preferred flour
  • ½ cup (50 g) cocoa powder
  • 2 tsp baking powder
  • ¼ cup (40 g) chocolate chips
  • ½ cup (50 g) protein powder (optional, replaces ½ cup oat flour)

Instructions

  1. Preheat your oven to 350°F (180°C).
  2. Line a 20 cm (7.9 inches) loaf pan with parchment paper, allowing some overhang, or grease it well with oil.
  3. In a large mixing bowl, mash the three ripe bananas with a fork until completely smooth.
  4. Add the nut butter and eggs to the mashed bananas.
  5. Stir the mixture until well combined.
  6. Add the granular sweetener, vanilla extract, and sea salt to the wet mixture.
  7. Whisk or stir the wet mixture for about two minutes, ensuring all ingredients are fully incorporated.
  8. Add the oat flour (or oat flour plus protein powder if using), cocoa powder, and baking powder to the bowl.
  9. Stir the dry ingredients into the wet mixture until just combined, being careful not to overmix.
  10. Gently fold in the ¼ cup of chocolate chips.
  11. Pour the batter into your prepared loaf pan.
  12. Optionally, sprinkle additional chocolate chips on top of the batter.
  13. Bake in the preheated oven for 30 to 40 minutes.
  14. Test for doneness by inserting a toothpick into the center of the bread; it should come out clean.
  15. Remove the loaf from the oven.
  16. Let the bread cool in the loaf pan for about 15 minutes.
  17. Carefully remove the loaf from the pan.
  18. Transfer the loaf to a wire rack and let it cool completely before slicing and serving.

Notes

Always use very ripe bananas for the best flavor and natural sweetness.
Do not overmix the batter once the dry ingredients are added; mix until just combined.
Allow the bread to cool completely before slicing to prevent crumbling.
If using protein powder, ensure it’s a flavor you enjoy as it can subtly impact the final taste.
