A delightful German Cherry Cake featuring a tender shortcrust base and a creamy, tangy quark filling studded with juicy cherries.

Ingredients

  • 50 grams flour
  • 125 g butter
  • 150 grams sugar
  • 1 packet of vanilla sugar
  • 1 egg
  • 750 g quark or drained Greek yogurt
  • 100 ml milk
  • 2 egg yolks
  • 25 g butter melted
  • 2 sachets vanilla pudding custard powder
  • 130 g sugar
  • 2 egg whites
  • 60 g sugar
  • 2 cups cherries (sour cherries, rainier etc)

Instructions

  1. Drain the cherries if using canned.
  2. If using Greek yogurt, drain 1 kg of Greek yogurt overnight in a sieve lined with paper towels; then measure out 750 g.
  3. Drain the quark in a colander for 10 minutes.
  4. Make the shortcrust pastry by combining 250 g flour, 125 g butter, 150 g sugar, 1 packet of vanilla sugar, and 1 egg in a stand mixer using the paddle attachment.
  5. Mix until a dough forms.
  6. Shape the dough into a ball or disk.
  7. Chill the dough in the refrigerator for 30 minutes.
  8. While the dough chills, prepare the filling.
  9. Combine 750 g quark, 100 ml milk, 2 egg yolks, 25 g melted butter (ensure it's not hot), 2 sachets of vanilla pudding powder, and 130 g sugar in a bowl.
  10. Whisk the mixture until it forms a creamy, smooth batter.
  11. In a separate clean bowl, whisk the 2 egg whites with 60 g sugar until stiff peaks form.
  12. Gently fold the stiff egg whites into the quark custard mixture.
  13. Remove the cold dough from the refrigerator.
  14. Press two-thirds of the dough onto the bottom of a 9-inch springform pan.
  15. Press the remaining one-third of the dough around the edges to form a rim.
  16. Pour the quark mixture into the prepared crust.
  17. Sprinkle the drained cherries evenly on top of the quark mixture.
  18. Bake in a preheated oven at 170-180 C (350 F) for about 60-70 minutes.
  19. Cool completely before serving.

Notes

Ensure quark or Greek yogurt is well-drained to prevent a watery filling.
Do not overmix the shortcrust dough to keep it tender.
Allow melted butter to cool before adding to the filling.
Let the cake cool completely before slicing for best results.
