Instructions

  1. Preheat the oven to 350°F.
  2. Line a baking sheet with parchment paper.
  3. In a large mixing bowl, cream together 1 cup softened butter and 1 1/4 cup granulated sugar with a handheld mixer for 2-3 minutes until light and fluffy.
  4. Add the large egg, egg yolk, and 2 teaspoons vanilla extract to the creamed mixture.
  5. Mix until just combined.

  7. Add the dry ingredients to the wet ingredients.
  8. Mix just until combined.
  9. Use a large cookie scoop (2 Tablespoons of dough) to portion the dough.
  10. Roll each scoop into a ball.
  11. Place dough balls on the prepared baking sheets about 2 inches apart.
  12. Refrigerate the cookie sheets with dough for 10 minutes to chill the dough.
  13. Bake for 10-12 minutes, or until the center of the cookies is set.
  14. Let the cookies cool on the pan for a few minutes.
  15. Move the cookies to a cooling rack to cool completely.
  16. Meanwhile, prepare the frosting.
  17. In a large mixing bowl, use a hand mixer to beat 1 package softened cream cheese and 6 Tablespoons softened butter until smooth.
  18. Add 2-3 cups powdered sugar, 1/2 teaspoon vanilla extract, and the zest of one lemon.
  19. Beat until the frosting is smooth and creamy.
  20. Once cookies are completely cooled, generously frost each cookie.
  21. Decorate with cut fresh fruit.

Notes

Ensure butter and cream cheese are softened to room temperature for best results.
Chill the dough for 10 minutes to prevent excessive spreading during baking.
Do not overmix the cookie dough after adding the flour.
Frost cookies only when they are completely cool to prevent melting.
