These soft, chewy sugar cookie bars with a dreamy vanilla frosting are incredibly simple to make and perfect for any occasion.

  • 1 cup (226g) unsalted butter
  • 2 cups (380g) granulated sugar
  • 2 large eggs
  • 1 teaspoon (5ml) vanilla extract
  • 3 ½ cups (420g) all-purpose flour
  • ½ teaspoon baking soda
  • ½ teaspoon cream of tartar
  • 1/2 teaspoon salt
  • 1 cup (226g) unsalted butter
  • 3 ½ cups (455g) powdered sugar
  • 1 tablespoon (15ml) heavy whipping cream
  • 1 teaspoon (15ml) vanilla bean paste or vanilla extract

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Line a 9-inch by 13-inch baking pan with parchment paper, leaving an overhang on the sides.
  3. Combine 1 cup unsalted butter with 2 cups granulated sugar in a large bowl.
  4. Beat the butter and sugar on medium speed until well creamed together and light.
  5. Add the 2 large eggs to the butter mixture.
  6. Add 1 teaspoon vanilla extract to the mixture.
  7. Mix until the eggs are well beaten and fully incorporated.
  8. In a separate medium bowl, combine 3 ½ cups all-purpose flour, ½ teaspoon baking soda, ½ teaspoon cream of tartar, and 1/2 teaspoon salt.
  9. Slowly add the dry ingredients into the wet batter.
  10. Beat on medium-low speed until well combined and a soft dough forms.
  11. Press the cookie dough evenly into the prepared 9×13-inch pan.
  12. Bake at 375°F (190°C) for 18-20 minutes, or until edges are lightly golden and the center is set.
  13. Allow the cookie bars to cool completely in the pan on a wire rack.
  14. For the frosting, cut 1 cup unsalted butter into pieces.
  15. Using a paddle attachment, whip the butter in a stand mixer for 5-7 minutes until it looks light in color and fluffy.
  16. Add 2 cups of the powdered sugar to the whipped butter.
  17. Mix on low speed until the powdered sugar is incorporated.
  18. Add 1 tablespoon heavy whipping cream and mix to combine.
  19. Add the remaining 1 ½ cups powdered sugar.
  20. Add 1 teaspoon vanilla bean paste or vanilla extract.
  21. Whip the frosting on high speed for at least 2 minutes until it is light and fluffy.
  22. Spread the prepared frosting evenly over the completely cooled cookie bars.
  23. Slice the frosted bars into squares.

Ensure all cold ingredients, especially butter and eggs, are at room temperature for best results.
