A delightfully tangy and creamy no-bake cheesecake featuring a graham cracker crust and a light, zesty key lime filling.

Ingredients

  • 2 1/2 cups graham crumbs (350g)
  • 1/2 cup melted unsalted butter
  • 3 packages full fat cream cheese room temperature (24oz/750g)
  • 1 1/2 cups powdered sugar (200 grams)
  • 1/4 cup key lime or lime juice (2 limes)
  • 1-2 tablespoon key lime or lime zest (2 regular limes)
  • 1 teaspoon vanilla
  • 3/4 cup heavy whipping cream cold, 30-35% fat ONLY
  • sweetened whipped cream for garnish

Instructions

  1. Combine graham crumbs and melted butter in a medium bowl.
  2. Press the crumb mixture firmly into the bottom of an 8-inch or 9-inch springform pan.
  3. Press the crumb mixture about 1 inch up the sides of the pan.
  4. Set the crust aside.
  5. In a large bowl, beat the room temperature cream cheese with an electric mixer until it is smooth.
  6. Add the 1 1/2 cups powdered sugar to the cream cheese.
  7. Add the 1/4 cup key lime or lime juice to the cream cheese mixture.
  8. Add the 1-2 tablespoons key lime or lime zest to the cream cheese mixture.
  9. Add the 1 teaspoon vanilla to the cream cheese mixture.
  10. Beat all ingredients until the mixture is smooth and well combined.
  11. In a separate, clean bowl, whip the cold heavy whipping cream with an electric mixer until stiff peaks form.
  12. Carefully fold the whipped cream into the cream cheese mixture.
  13. Do this gently to avoid deflating the whipped cream.
  14. Taste the filling and adjust sweetness if necessary.
  15. Spread the finished cheesecake filling evenly into the prepared crust.
  16. Cover the springform pan with plastic wrap.
  17. Refrigerate the cheesecake for at least 5-6 hours or until it is firm.
  18. Slice and serve the Easy Key Lime Cheesecake.
  19. Garnish with sweetened whipped cream as desired.

Notes

Ensure cream cheese is at room temperature for a smooth filling.
Do not overmix the cream cheese after adding liquids.
Chill the cheesecake for the full recommended time for best results.
Use cold heavy whipping cream for stiff peaks.
