Deliciously crispy, chocolatey, and naturally sweetened no-bake cookies, perfect for a quick, wholesome treat.

  • 1/4 cup coconut butter
  • 1/4 cup unsweetened sunflower seed butter
  • 1/3 cup maple syrup
  • 1 teaspoon pure vanilla extract
  • 3 tablespoons unsweetened cacao/cocoa powder
  • 1/8 teaspoon salt
  • 2 cups crispy puffed quinoa

Instructions

  1. Line a baking sheet with parchment paper.
  2. Set the lined baking sheet aside.
  3. In a medium bowl, add the coconut butter, sunflower seed butter, maple syrup, and vanilla.
  4. Melt the mixture in the microwave for about 30 seconds.
  5. Whisk the melted mixture until it is smooth.
  6. Whisk in the cacao powder and salt until fully combined.
  7. Gently fold in the puffed quinoa until evenly distributed.
  8. Using a small cookie scoop or tablespoon, scoop the batter onto the baking sheet.
  9. Gently flatten and shape the batter into rounds or desired shapes.
  10. Place the baking sheet in the freezer.
  11. Freeze until the cookies are set, about 30 minutes.
  12. Keep them stored in an airtight container in your freezer.
