These incredibly easy and delicious Cool Whip Cookies are made with just four ingredients and bake up soft, chewy, and bursting with flavor.

Ingredients

  • 1 box lemon cake mix
  • 1 8 ounce tub of Cool Whip (thawed)
  • 1 large egg
  • 1 cup powdered sugar

Instructions

  1. Place the cake mix, thawed Cool Whip, and egg into a large mixing bowl.
  2. Mix on medium speed until the ingredients are well combined and the batter is smooth.
  3. Scrape the sticky batter into a clean bowl.
  4. Cover the bowl tightly with plastic wrap.
  5. Refrigerate the dough for 30 minutes to firm it up.
  6. After 30 minutes, preheat your oven to 350°F (175°C).
  7. Line a large baking sheet with parchment paper or lightly grease it.
  8. Pour the powdered sugar into a small, separate bowl.
  9. Use a cookie scoop to portion out individual scoops of the chilled cookie dough.
  10. Drop each scoop of dough into the powdered sugar.
  11. Roll the dough in your hands to form a ball, ensuring it's fully coated in powdered sugar.
  12. Place the rolled cookie dough balls onto the prepared baking sheet, spacing them approximately 2 inches apart.
  13. Bake for 8-10 minutes, or until the edges are set and the bottoms are lightly golden brown.
  14. Allow the cookies to cool on the baking sheet for 5 minutes.
  15. Transfer the slightly cooled cookies to a wire rack to finish cooling completely.

Ensure Cool Whip is fully thawed for best results.
Don’t skip the 30-minute chilling step; it makes the dough easier to handle.
