These incredibly easy, one-bowl Chocolate Chip Flourless Peanut Butter Cookies are soft, chewy, and packed with peanut butter and chocolate flavor.

  • 1 cup creamy peanut butter
  • 1 cup brown sugar monkfruit, or regular brown sugar if not keto
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 2 teaspoons vanilla extract
  • 1 egg, beaten
  • 1/2 cup Lily's Sugar Free semi-sweet chocolate chips, or regular if not keto

Instructions

  1. Preheat the oven to 325°F (160°C).
  2. In a medium size mixing bowl, combine the creamy peanut butter, brown sugar monkfruit (or regular brown sugar), baking powder, salt, vanilla extract, and beaten egg.
  3. Stir all ingredients together until well combined and the mixture is thick.
  4. Stir in the Lily's Sugar Free semi-sweet chocolate chips (or regular chocolate chips) until evenly distributed.
  5. Using a one-inch cookie scoop, place portions of the dough onto a greased cookie sheet.
  6. Bake the cookies for 10-12 minutes for soft and chewy cookies.
  7. Bake the cookies for 15 minutes for crunchier cookies.
  8. Allow the baked cookies to cool on the cookie sheet for at least 10 minutes to finish setting before moving.

Notes

Use creamy peanut butter (not natural) for best results.
Don’t skip the cooling time on the baking sheet; cookies are delicate when warm.
For extra flavor, press a few extra chocolate chips on top before baking.
Adjust baking time for your preferred texture: less for chewy, more for crispy.
