Start your day with a warm, fluffy, protein-packed pancake bowl that’s perfect for meal prep and requires no bananas.

Ingredients

  • 1 egg
  • 50 g yogurt vanilla or unflavoured
  • 70 ml milk I use soy or almond but any milk will work
  • 35 g flour all purpose
  • 25 g protein powder vanilla or white chocolate works well. This recipe uses a vegan protein powder, if using whey, use slightly less liquid.
  • 5 g zero calorie granulated sweetener or sweetener of choice, 1 tsp
  • 1/2 tsp baking powder

Instructions

  1. Preheat oven to 180°C (356°F).
  2. Add the egg to an oven-safe glass bowl.
  3. Add the yogurt to the bowl.
  4. Add the milk to the bowl.
  5. Add the all-purpose flour to the bowl.
  6. Add the protein powder to the bowl.
  7. Add the zero calorie granulated sweetener to the bowl.
  8. Add the baking powder to the bowl.
  9. Mix all ingredients well until combined.
  10. If preparing multiple bowls for meal prep, add each ingredient separately to each individual bowl and mix.
  11. Add your desired toppings to the batter.
  12. Bake for 20-22 minutes.
  13. Remove from oven.
  14. Let cool for 5-10 minutes.
  15. Serve with extra yogurt, peanut butter, or maple syrup.

Notes

Adjust liquid slightly if using whey protein powder, as it may absorb less.
Don’t overmix your batter; mix just until combined.
For meal prep, ensure each bowl is fully mixed before baking.
Allow to cool for a few minutes after baking for the best texture.
