Chewy, sweet, and perfectly spiced, these no-bake Apricot Energy Balls are a healthy snack or quick breakfast.

Ingredients

  • 6 dates (pitted and soaked in warm water for 2 minutes to soften)
  • 1 cup dried apricots
  • 2 1/2 tbsp chia seeds
  • 1/3 cup cashew halves
  • 2 tbsp coconut oil
  • 1/8 tsp sea salt
  • 1/4 tsp ground cinnamon

Instructions

  1. Place the pitted dates in a bowl.
  2. Cover the dates with warm water.
  3. Soak the dates for 2 minutes to soften them.
  4. Place the coconut oil in a microwave-safe bowl.
  5. Microwave the coconut oil for about 1 minute until fully liquid.
  6. Drain the softened dates very well.
  7. Add the softened dates to a food processor.
  8. Add the dried apricots to the food processor.
  9. Add the cashew halves to the food processor.
  10. Add the melted coconut oil to the food processor.
  11. Add the chia seeds to the food processor.
  12. Add the sea salt to the food processor.
  13. Add the ground cinnamon to the food processor.
  14. Blend the mixture for 20-30 seconds.
  15. Blend until the mixture is finely chopped and holds together when pressed.
  16. Stop blending when the mixture still has a slight texture and is not completely smooth.
  17. Scoop small portions of the mixture.
  18. Roll the mixture into 1-inch balls using your hands or a small spoon.
  19. Place the formed balls on a baking sheet or plate.
  20. Refrigerate the formed balls for at least 30 minutes.
  21. Allow the balls to chill for up to 2 hours to set and firm up.
  22. Serve and enjoy the chilled energy balls.
